Many people are very familiar with Jamaican food and recipes from other English speaking Caribbean Islands simply from vacation experiences. The truth is that Caribbean cooking in the Spanish speaking islands tend to be somewhat different. Also, there are differences in the cooking styles of Central and South America when compared to the Dominican Republic. Even places like Puerto Rico and Cuba, both very close to the Dominican Republic physically, have foods or cooking styles that are unique and apart from the type of dishes found here. There are are number of things that have influenced
cooking in the Dominican Republic. One of those things is history.
Many people are aware that at one time, the Dominican Republic was dominated
by Spain. Naturally the Spaniards brought their own style of cooking
when they came. But in addition to that, France also controlled the
island for a time and some of the influences of French or creole style
cooking has worked its way into the culture. Last, but not least,
are the dishes or cooking styles already here from the native indian population.

adapted different food products and cooking styles to create dishes that
are uniquely their own.
